Healthier Brunch with Quorn

Brunch has to be my favourite meal of the day. When you’ve missed out on breakfast and it’s a bit too early for lunch, this is where a healthier brunch meal steps in. I’m a big fan of the sweeter alternatives, like French toast with maple syrup, or a stack of American style pancakes with blueberries and raspberries. However recently I have been exploring more savoury options with the use of Quorn!

Here are my 3 favourites so far:

1. Chicken Divan-Style Omelette

A velvety Hollandaise sauce topping an omelette of Quorn Meat Free Chicken Pieces, grated cheese, sliced grapes and broccoli or asparagus. As you can guess by the ingredients, this is a very filling brunch and sets me up perfectly for a busy day. You definitely won’t need to  eat again until dinner time with this packed omelette!

2. Ham and Egg cups

I used the Meat Free Quorn Smokey Ham slices to line a little ramekin dish and broke an egg into the middle of the cup. Then sprinkle with salt and pepper, cover with foil and bake in the oven until the eggs are firm and whites are opaque. You can garnish with cheese or herbs if you like. This works as a perfectly cute little brunch dish for kids too.

3. Cheese and Bacon Croissant

A perfect one for grabbing on the go, you can have this cold but I prefer it toasted so that the cheese melts and the pastry is nice and brown. I used the Quorn Meat Free Bacon Rashers for this, teamed up with some smoked apple wood cheddar slices, rather than normal cheddar, for that extra smoky, tangy flavour.

If any of the above ever fails me, a crispy morning roll with Quorn Meat Free Sausages and lots of tomato sauce will always do the trick!
