Quick and Easy Vegetarian Meatballs

Quite often I've heard people complain they have no time to cook, so they use jars of pasta sauce for convenience. The thing is though; cooking from scratch can be just as quick and convenient as opening an expensive, additive-filled jar of sauce from the supermarket. Take this delicious, healthier, quick and easy Quorn Meat Free Meatballs with Tomato and Spinach recipe, for example – it's on your dinner table in less than 20 minutes! Still think you've got no time to cook?

Quorn Meat Free Swedish Meatballs with Tomato and Spinach (serves 4)

1 tbsp olive oil
1 bag frozen Quorn Meat Free Swedish Meatballs
2 tins chopped tomatoes
4 cloves of garlic, crushed
1 onion, chopped
2 or 3 large handfuls of spinach
Fresh basil
Salt and pepper

  1. Cook the Quorn as instructed on the packet and leave to one side.
  2. Fry the onion and garlic in the olive oil for about 5 minutes.
  3. Add the tinned tomatoes and simmer for about 10 minutes.
  4. Tear in some fresh basil.
  5. Stir in the spinach.
  6. Add salt and pepper to taste, then stir in the Quorn and heat through until the spinach has wilted.
  7. Serve with spaghetti and garlic bread (or whatever you like).
