Quorn Filo Parcels

Quorn Filo Parcels with Mushrooms Mozzarella and Sweet Chilli Sauce


2 tbsp butter, melted

8 sheets of filo pastry

1 tbsp olive oil

2 quorn burgers

2 portabello mushrooms

60g mozzarella, sliced in half

2 tsp sweet chilli sauce

freshly ground black pepper


  1. Preheat the overn to 220c/200c fan/
  2. Gently fry the mushrooms and burgers in the olive oil a few minutes each side until the burgers are starting to brown and the mushrooms are juicy and tender. Season the mushrooms with black pepper.
  3. Lay your first sheet of filo pastry on a baking tray, brush with melted butter, top with another sheet and keep going brushing each sheet with butter until you have 4 layers.
  4. Place a burger in the centre of the pastry, top with the mushroom, then the mozzarella and a drizzle of sweet chilli sauce.
  5. Gather the edges of the pastry together firmly in a parcel.
  6. Do the same for the next parcel, then brush both with the remaining butter.
  7. Bake in the oven for 20 minutes until golden

Serves 2

We tried dicing the fried Quorn burger and mushroom with the mozzarella into 1cm dice and made smaller parcels using 2 sheets of filo pastry for an appetiser/canapé.
