Sausage Gnocchi with Kale and Sun-Dried Tomatoes – Quorn

Summer always has me thinking about Italian food and it doesn’t get much simpler than this Quorn Sausage gnocchi dish that is ready in under 10 minutes.

You have the comforting potato from the gnocchi, the healthy protein* from the wild garlic and parsley Quorn Sausages and lots of flavour added from the onions and tomatoes. I even hid some kale in there to give it a little health boost. It is also very much husband approved, and he doesn’t even really like kale.

Summer is busy for most of us, so it can be easy for us to let our diet slip and just go for something that is convenient. I know how strong that temptation can be, which is why we always keep Quorn sausages in our fridge, as they always make a quick and healthy meal. Pair it with some gnocchi and you have yourself a really comforting dish.

It sure doesn’t feel like summer here today. It’s cold, wet and windy and I have even considered putting the heating on. When the weather is like this, my mind wanders to sunny places I have been to recently and I have been thinking about my recent trip to Italy. I say recent, it was in April and I still haven’t posted about it (I will soon, I promise). We had the most amazing gnocchi when we were there and it was so simple and reminded me that Italian food doesn’t have to be overly complicated.

With there being lots of holidays, BBQs and summer celebrations going on at the moment, many people turn to extreme diets to lose weight, but they just end up making themselves unhealthier. You don’t need to go to anything extreme to be healthy and lose weight (if that is your goal), just work on increasing your vegetables and look at having a balance diet packed with healthy protein* and fibre.

I tried so many fad diets to get “summer ready” (note: no matter what you look like, your body is always summer ready) and they never worked. What did work for me was sneaking in extra vegetables to my meals, like kale in this dish, and switching to meat alternatives like Quorn, that contain complete amino acids through the protein and fibre. Reducing my meat intake not only reduced my calories, but reduced my fat intake as well.

Reducing your meat intake doesn’t (and shouldn’t) mean reducing your protein intake though, as healthy protein* and fibre are an important part of a balance diet – it helps to repair muscles after exercise and it also helps you to stay fuller for longer. I made sure I was still getting enough protein when I was losing weight by adding Quorn Sausages and Quorn Chicken Pieces to my meals.
