Chilli con Quorn

A marvellous Chilli recipe, ready in 25 minutes and packed with flavour!

Let's Cook

  1. Heat the oil in a large frying pan. Sauté the onion and garlic for 2 minutes, add the chilli powder, cumin and cinnamon and cook for a further minute.
  2. Stir in the Quorn mince, coating it well with the spices and continue to cook for a further 1-2 minutes.
  3. Add the green pepper, tomatoes, kidney beans, tomato purée and oregano. Stir in the coriander, season to taste with a little salt and freshly ground black pepper. Cover and simmer gently for 10 minutes.
  4. Serve with rice or jacket potatoes and sprinkle over a little extra coriander to garnish and a spoonful of soured cream if desired.

350g pack of Quorn Mince
1 tbsp oil
1 onion, finely chopped
1 garlic clove, crushed
1½ tsp chilli powder
½ tsp ground cumin
½ tsp ground cinnamon
1 green pepper, seeded and chopped
2 x 400g can chopped tomatoes
215g can kidney beans, drained
2 tablespoons tomato purée
2 teaspoons dried oregano
4 tbsp chopped coriander plus 1 tbsp for garnish
salt and freshly ground black pepper to taste
soured cream for a serving - optional
