Low fat Quorn Bolognese

Let's Cook

  1. Heat the oil in a saucepan and fry the onion, carrot and garlic gently for 5 minutes.
  2. Add the tomatoes, tomato purée, Quorn mince, dried herbs and vegetable stock. Cover and simmer gently for a further 10-15 minutes.
  3. Meanwhile, bring a large pan of salted water to the boil. Add the spaghetti and cook as instructions on the packet.
  4. Stir the basil into the sauce, season to taste with salt and freshly ground black pepper.
  5. Serve with extra basil and a few Italian style hard cheese shavings.

350g Quorn Mince
1 tbsp olive oil
1 onion, finely chopped
1 carrot, finely chopped
2 garlic cloves, crushed
2 x 400g tin chopped tomatoes
4 tbsp tomato purée
2 tsp dried oregano
1 tsp dried majoram
150ml vegetable stock
2 tbsp fresh basil leaves, torn, plus extra for garnish
Salt and freshly ground black pepper
240g dried spaghetti
Italian style hard cheese shavings to serve
