Quorn Toad in the Hole

Try this quick and easy toad in the roll recipe, made with Quorn Vegetarian Sausages rolled in Yorkshire pudding with a layer of browned onions.

Ingredients

  • 6 Quorn Vegetarian Sausages
  • 200g plain flour
  • A good pinch of salt and black pepper
  • 3 eggs, beaten
  • 300ml semi skimmed milk
  • 1 tbsp cold water
  • 4 tbsp vegetable oil
  • 1 medium red onion, sliced

Method

  1. Pre -heat the oven to 220°C/425°F/Gas Mark 7
  2. Combine the flour, salt, pepper and eggs in a large bowl and gradually beat in the milk. Whisk for 1-2 minutes to remove any large lumps. Stir in the cold water
  3. Place 2 tbsp of the vegetable oil in a large baking tray and place in the oven for 1-2 minutes until very hot then pour in the batter mix to make a layer approximately 1 cm deep (This may require the use of two baking trays depending on the size of the ones available).Cook for approximately 13 minutes until golden and fluffy
  4. Meanwhile, preheat 1 tbsp of the oil to cook the onions until soft and browned and with the remaining 1 tbsp of oil cook the Quorn Sausages for 8-10 minutes until golden brown
  5. Remove the Yorkshire pudding from the tray and slice into 6 equal sized pieces. Cover with a layer of onions. Place a Quorn Sausage at the edge of each piece and roll

Enjoy with onion gravy and English mustard or creamed horseradish
