Quorn Meat Free Chicken Pieces Pambazos

A delicious soft roll, dipped in chilli salsa sauce and griddled - loaded with Mexican spiced Quorn Meat Free Chicken Pieces and topped with Quorn Meat Free Sausage (cooked to chorizo style), potato & onion drizzled with a coriander and lime sour cream, garnished with Chili and Lime

Ingredients

  • 6 Soft Rolls (gluten free optional)
  • 500g Quorn Meat Free Sausages (small cubed)
  • 220g mushrooms, finely chopped
  • 5 fresh chillies (stems and seeds removed)
  • 4 dried arbol chillies (stems and seeds removed)
  • 4 garlic, cloves
  • 1 tbsp oregano, dried
  • ½ tsp. cumin, ground
  • 1 tbsp. smoked paprika, ground
  • 50g fresh coriander
  • 60ml apple cider vinegar
  • Oil for frying
  • 150g potato- small diced
  • 1 white onion- finely diced
  • Salt and Pepper
  • 750g Quorn Meat Free Chicken Pieces
  • 3 cloves garlic finely sliced
  • 2 fresh chillies finely diced
  • 20g coriander stalks finely chopped
  • 800g chopped tinned tomatoes
  • 1 tbsp. caster sugar
  • 100ml vegetable stock
  • 120ml sour cream
  • 30g finely chopped coriander
  • Juice of 2 freshly squeezed limes
  • Salt and pepper
  • 12 fresh chillies (remove stems, retain seeds)
  • 1 clove garlic (peeled)
  • ½ small white onion (peeled and roughly chopped)
  • 100ml water
  • Salt and pepper

Method

Make Quorn Meat Free Sausage (chorizo style)

1. Bring a small pot of water to a boil. Drop the arbol and fresh chillies into the boiling water, and then add the diced potato. Turn heat down to the lowest setting and let the chillies and potato simmer gently for 10 min

2. Remove the potatoes from the water and set aside

3. Reserve 120ml of the chilli soaking liquid

4. Remove chillies and place in blender. Add the garlic, oregano, cumin, smoked paprika, apple cider vinegar, and 60ml soaking liquid to the blender till smooth. If necessary add the remaining 60ml of the soaking liquid to get things moving in the blender. Season with salt and pepper

5. Pour the chilli mixture into a bowl with the Quorn Meat Free Sausages and potato. Set aside

6. Heat a pan and add 1 tbsp of oil. Once the oil is hot add the finely chopped mushrooms and the finely diced onions and continue to cook until they begin to brown

7. Pour the Quorn Meat Free Sausage mixture into the pan with the mushrooms and onions- mix well and cook out all ingredients to 75 degrees. Season to taste

Make Mexican Quorn  Meat Free Chicken

8. Fry the Quorn Meat Free Chicken Pieces in hot pan then add garlic, chilli and coriander stalks fry till garlic golden brown and stalks are soft

9. Place on low heat and add the chopped tomatoes and sugar to balance out the tomato bitterness

10. Add veg stock and cook out to 75 degrees.

 Season to taste

Make Coriander Sour Cream

11. Mix sour cream, lime juice and coriander together and season to taste

Make Chilli Salsa Sauce

12. Place chillies, garlic and onion in a blender with 100ml water- blend until smooth

13. Pour into a bowl and set aside

Assemble Pambazo

14. Submerge each soft roll into the chilli salsa sauce and cook on a hot griddle (or BBQ) until golden brown then slice each roll in half

15. Load griddled rolls with the Mexican Quorn Meat Free Chicken Pieces, top with Quorn Meat Free Sausages Chorizo style and drizzle with the coriander sour cream

16. Garnish with a wedge of lime and chopped chilli
