Roasted Mushrooms:
  • 100g chestnut mushrooms, sliced
  • 1 tbsp olive oil
  • 1 tsp finely chopped fresh thyme
  • 1/4 tsp each salt and pepper
Vegan Aioli:
  • 2 tbsp vegan mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1 tsp agave nectar
  • 1 small garlic clove, minced
  • Pinch each salt, pepper and smoked paprika
  • 2 sesame seed buns, split and toasted
  • 10g rocket
  • 4 thick tomato slices
  • 4 tbsp guacamole


  1. Preheat the oven to 220°C / Fan 200°C / Gas 7. Prepare Quorn Ultimate Burgers according to package directions, along with onion rings.
  2. To make the roasted mushrooms, toss the mushrooms with the oil, thyme, salt and pepper. Arrange in single layer on parchment paper-lined baking tray. Bake in the same oven as the onion rings for 15 minutes or until golden brown and tender.
  3. To make the vegan aioli, mix together the vegan mayonnaise, mustard oil, honey, garlic, salt, pepper and smoked paprika until blended.
  4. Serve the burgers in buns with the rocket, tomato, guacamole, aioli, mushrooms and onions rings.
