Vegan Greek Spinach Rice (Spanakorizo) Recipe

A quick and easy recipe for this classic and well-loved Greek side dish, made with Quorn Makes Amazing Turkish Style Kebab. Packed with spinach, rice and lots of flavour! Serve hot or cold with Greek salad, pita and your favourite dips for the ultimate vegan meze experience.

Made with Quorn Makes Amazing Turkish Style Kebabs

Ingredients

  • 1 pack Quorn Makes Amazing Turkish Style Kebab
  • 200g fresh spinach rinsed
  • 1 tbsp lemon juice
  • 2-3 spring onions, chopped
  • 1-2 tablespoons olive oil
  • ½ tsp dry mint
  • ½ tsp oregano
  • ½ tsp chives
  • 2 tbsp chopped fresh dill
  • 1/3 cups water
  • 1/3 cup medium grain rice
  • Salt and pepper to taste
  • Vegan yogurt - to serve

Method

  1. In a large pot, saute spring onion over a medium heat in ½ tbsp olive oil until soft
  2. Add the spinach, lemon juice and ½ tbsp more olive oil and cook, stirring frequently, until the spinach has wilted
  3. Add dry mint, oregano, chives, dill and 2/3 cup water and bring to a boil.
  4. Add rice, salt and pepper and simmer, covered for about 20 minutes until rice is soft. Check on the rice throughout and add additional water if needed
  5. Meanwhile, in a separate frying pan prepare the Quorn Makes Amazing Turkish Style Kebab according to the pack
  6. Once the rice is cooked mix in the Turkish style kebab, serve with another drizzle of olive oil, vegan yogurt and an extra squeeze of lemon.
