Vegan Peri-Peri Picnic Wraps by Thinly Spread

  • 1 pack Quorn Makes Amazing Peri Peri Strips
  • 1 tbsp oil
  • 4 soft flour tortilla wraps
  • ¼ cucumber, halved lengthwise and sliced
  • 12 baby plum tomatoes, sliced
  • 4 handfuls of salad leaves
  • 1 small red onion, halved and thinly sliced
  • For the vegan yoghurt drizzle
  • 3 tbsp soy yoghurt
  • 1 tsp Dijon mustard
  • 2 tsp lemon juice
  • Salt and pepper to taste


  1. Gently heat the oil in a large non-stick frying pan. Fry the Quorn Makes Amazing Peri Peri strips for 3 minutes, turning frequently, until piping hot.
  2. Combine the yoghurt drizzle ingredients in a bowl, stir well. Add salt and pepper to taste.
  3. To assemble, top each tortilla with a handful of salad leaves followed by tomatoes, cucumber and onion. Top with the cooked peri peri strips and drizzle with a little of the yoghurt sauce.
  4. Fold up the bottom of the wrap then fold in the sides to encase the filling.
  5. Serve hot or cold with the rest of the drizzle as a dip.
