Ingredients

  • 8-9 Quorn Brilliant Bangers, chopped into chunks
  • 2 tbsp veg oil
  • 4 large potatoes, peeled and chopped into chunks
  • 3 sweet peppers, sliced
  • 1 chopped red onion
  • 1 tsp roast potato seasoning
  • 1 salt
  • 1 tsp pepper
  • 1 tsp mixed herbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 tsp olive oil
  • For the jerk gravy
  • 4 tbsp vegan gravy granules
  • 280ml boiling water
  • 1 tsp jerk marinade
  • 3 sprigs thyme
  • 2 bay leaves
  • 1 lime
  • 1 tsp brown sugar
  • 1 spring onion

Method

  1. Bring a large pan of water to the boil over a medium heat. Add the potato chunks and boil until soft, around 12 - 15 minutes.
  2. Drain the potatoes from pan and transfer to a baking tray. Drizzle with oil and season with roast potato seasoning, garlic powder, paprika, and salt and pepper. Cook on the middle shelf of a preheated oven at 180 C for around 30 minutes, turning halfway through, until crispy and golden brown.
  3. Meanwhile, preheat 1 tbsp of oil over a medium heat and fry the Quorn Brilliant Bangers for 6-8 minutes, turning frequently.
  4. Place peppers and onions into a bowl, drizzle with some olive oil, salt and pepper and toss until coated. When the potatoes are 10 minutes from cooked, remove from oven and top with the peppers and onions and bake for the remainder of 10 -15 minutes until soft.
  5. Meanwhile, prepare the jerk gravy by mixing the vegan gravy granules and boiling water in small pan over a low heat. Add jerk marinade, thyme, bay leaves, lime, brown sugar, and spring onion and simmer for around 10 min until thickened.
  6. Removed the cooked potatoes and vegetables from the oven, layer with the Bangers, cover with the jerk gravy, sprinkle with chopped spring onion and enjoy!
