Easy Kids Veggie Lunchbox Sandwiches

Ingredients

For the Sandwiches:

  • 50g Quorn Vegetarian BBQ Chicken Sandwich Filler
  • 50g Quorn Vegetarian Chicken & Sweetcorn Sandwich Filler
  • 2 slices seeded brown bread
  • 25g bistro salad leaves

For the Thousand Island Style Dip:

  • 2 tbsp low fat yoghurt
  • 1 tsp tomato ketchup
  • ½ small garlic clove, finely grated

For Crudité:

  • ½ stick celery, sliced into thick matchsticks
  • ½ carrot, sliced into thick matchsticks
  • ¼ cucumber, sliced into thick matchsticks
  • 3 baby corn, halved

To Serve:

  • A handful of crisps (optional)

Method

  1. To make the sandwiches, layer the salad leaves on one slice of bread. Place the second slice of bread on top. Cut the sandwich in half diagonally.
  2. Open each sandwich half, fill one side with BBQ Chicken Sandwich Filler and the other with Chicken & Sweetcorn Sandwich Filler. Slice each sandwich diagonally.
  3. For the thousand island style dip, place all the ingredients into a small bowl. Stir to combine.
  4. Serve by arranging the crudité on 2 plates. Spoon the dip into 2 egg cups or small ramekins and place onto the plates. Finish with a triangle of each sandwich flavour and a handful of crisps.
