We’ve used Quorn Pieces to whip up two deliciously tasty vegetarian sandwich fillers! A BBQ chicken sandwich filler AND a veggie twist on the classic chicken & Sweetcorn sandwich filler.
We’re serving our triangle sandwiches on seeded brown bread, with vegetable crudité and a delicious dipping sauce – all perfect for school lunchboxes and tasty lunches on the go.

100g Frozen Quorn Pieces
For the Sweetcorn filling:
1 tbsp. no added salt and sugar sweetcorn ½ tbsp. reduced fat mayonnaise
For the BBQ filling:
½ tbsp. BBQ sauce
½ tbsp. reduced fat mayonnaise
½ tbsp. lime juice
For the sandwiches:
2 slices seeded brown bread
25g bistro salad leaves
For the thousand island style dip:
2 tbsp. low fat yoghurt
1 tsp. tomato ketchup
½ small garlic clove, finely grated
For the crudité:
½ stick celery, sliced into thick matchsticks
½ carrot, sliced into thick matchsticks
¼ cucumber, sliced into thick matchsticks
3 baby corn, halved
To serve:
A handful of crinkle cut crisps (optional)
