Easy Greek Inspired Pitas with Quorn Pieces

Packed full of Mediterranean flavour, this Greek-inspired Pita recipe is perfect for lunch or a light dinner. Quorn Pieces are cooked and then coated in fresh and herby yoghurt sauce, which is an easy twist on a tzatziki and made using simple ingredients for an explosion of flavour. Once your herby Quorn Pieces are prepped, all that’s left to do is pack your pitas with fresh salad, olives and roasted red peppers for a deliciously nourishing meal, that’s ready in just 10 minutes.

Ingredients

  • For the Quorn Pieces:

  • 300g Quorn Pieces

  • 4 tbsp. low fat Greek yoghurt

  • 1 tbsp. mint, chopped

  • 1 tbsp. dill, chopped

  • 1 tbsp. flat leaf parsley, chopped

  • 1 garlic clove, crushed

  • For the pita pockets:

  • 4 wholemeal pittas

  • 25g curly lettuce

  • 50g roasted red peppers, sliced

  • 50g mixed olives, halved

  • 50g cucumber, thinly sliced

  • ¼ red onion, thinly sliced

Method

  1. Pre-heat the oven to 180°C (fan)/200°C electric/Gas Mark 6.
  2. Line a baking tray with baking paper, place the frozen Quorn Pieces onto the baking tray and cook in a pre-heated oven for 10 minutes. Remove and allow to cool.
  3. Place the yoghurt, chopped herbs and garlic into a bowl and mix well. Add the cooked Quorn Pieces and mix to coat.
  4. Cut the pita breads in half. Fill each pita with the herby Quorn Pieces, lettuce, roasted red pepper, olives, cucumber and red onion. Enjoy!

Tip: Prep the Quorn Pieces ahead of time, ready to add to pasta salads, wraps, or with a fresh green salad!
