Ingredients
- 350g Quorn Vegan Pieces
- 400g cooked pasta
- 65g kale
- 65g baby spinach
- 3 spring onions
- Fresh thyme
Pea pesto:
- 200g green peas
- pine nuts
- fresh basil
- ½ tbsp olive oil
- juice of 1 lemon
- Salt and Pepper to taste
Method
- To make the pea pesto, prepare the peas according to the instructions on pack. Blend the cooked peas with the pine nuts, basil and olive oil in a food processor and until smooth. Add the lemon juice, salt and pepper to taste.
- Next, fry the Quorn Vegan Pieces until golden brown. Add the kale and fry for a few more minutes then combine in a bowl with the cooked pasta, spinach and pea pesto mix.
- Finally, chop the spring onions fresh thyme. Sprinkle over the pasta salad, serve and enjoy.
