
Quorn Chicken & Spring Greens One Pot Lasagne
This One Pot Quorn Chicken and Spring Greens Lasagne is a creamy and comforting dinner idea. Our one pot lasagne comes together in one pan too for an easy, fuss free take on a traditional dish. It’s speedier to make than your usual lasagne too, just 30-40 minutes and you have a creamy, hearty meal the whole family will love. Add some garlic bread and enjoy!

Ingredients
- 300g Quorn Pieces
- 1tsp olive oil
- 6 fresh lasagne sheets
- 2 shallots, finely diced
- 5 garlic cloves, finely diced
- 2 leeks, thinly sliced
- 100g cavolo nero, sliced
- 40g vegetarian parmesan, grated
- 100g cheddar, grated
- 2 tbsp butter
- 2–3 tbsp plain flour
- 600-800ml milk
- 1 tbsp half-fat crème fraiche
- Nutmeg
- Salt and pepper
- Fresh thyme
- Fresh basil
Method

Preheat the grill to high. In a large pan, heat the olive oil and add in the garlic, shallots and leeks with a sprinkle of fresh thyme. Sauté until softened.

Add the Quorn Pieces and stir in the butter until melted, then sprinkle over the flour and cook for around a minute before gradually pouring in about 600ml milk, stirring constantly until a silky sauce forms.

Add in half of the grated parmesan, crème fraiche, cavolo nero, and chopped basil. Season with salt, pepper, and a good sprinkle of nutmeg.

Add broken lasagne sheets to the pan, stirring regularly to prevent sticking. Cook until the pasta is soft and evenly coated in the sauce, adding a little more milk if needed.

Once the lasagne sheets are cooked, sprinkle over the grated cheddar, the rest of the parmesan and add a little more thyme and pepper.

Grill for 5-7 minutes until golden and bubbling.
