Quorn Crispy Nuggets "Chicken" Vegetarian Waffles

The Flexitarian has created this delicious "Chicken" Vegetarian Waffles dish. Quorn Crispy Nuggets are the perfect topping for these meat-free "chicken" waffles. Serve our vegetarian chicken nuggets alongside a side of fruity pineapple salsa for a mouth-watering combination. This meal is quick and easy to make and perfect for family and friends.

Ingredients

  • 16 Quorn Crispy Nuggets

FOR THE SALSA

  • 275g chopped fresh pineapple
  • 100g chopped tomatoes
  • ½ orange pepper
  • 60g chopped red onion
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 10g chopped fresh coriander
  • Olive oil
  • Chopped green chilli (to taste)
  • Salt & pepper

FOR THE WAFFLES

  • 190g plain flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 350ml non-dairy milk
  • 2 tsp apple cider vinegar
  • 60ml melted coconut oil (or vegetable oil)

TOPPINGS

  • Small bag of rocket
  • Maple syrup

Method

  1. Make the salsa: Chop all its ingredients and toss in olive oil and lemon juice. Season with salt & pepper. Set aside.
  2. Preheat the oven to 200°C/ Gas 7. Preheat the waffle iron.
  3. Make the waffle batter: In a medium bowl mix together the flour, baking powder and salt. In another bowl stir together the milk, vinegar, and oil. Tip the wet ingredients into the dry ingredients and mix until well combined.
  4. Make the nuggets: Scatter the Quorn Crispy Nuggets on a baking tray and cook for 15 minutes.
  5. Oil the waffle iron and cook the first waffle. Keep it warm while you make the others.
  6. To serve, put some rocket on a plate. Top with a waffle and 4 to 6 Quorn Crispy Nuggets. Add some salsa and a drizzle of maple syrup. Eat straight away.
