A Little Effort

Ingredients

  • 300g pack of Quorn Swedish Style Balls
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 pepper, chopped
  • 2 garlic cloves, minced
  • 1 tin of chopped tomatoes
  • 1 litre vegetable stock
  • 1 tbsp balsamic vinegar
  • 1 tbsp of dried mixed herbs
  • 1 tsp sugar or sweetener
  • 200g macaroni pasta
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Nutritional yeast flakes to garnish (optional)

Method

  1. In a large pot, heat some olive oil over medium heat. Add all of the chopped vegetables and garlic, and cook for 5 minutes, or until the vegetables are softened.
  2. Add the chopped tomatoes, vegetable stock, balsamic vinegar, sugar/sweetener, herbs and pasta to the pot. Bring to a boil, then reduce the heat and simmer until the pasta is cooked.
  3. Meanwhile, whilst that is cooking, prepare the Quorn meatballs as per the instructions on the pack.
  4. Once cooked, add the Quorn meatballs to the pot and stir to combine.
  5. Season with salt and pepper to taste.
  6. Divide into bowls and sprinkle nutritional yeast flakes on top to serve.
  7. Enjoy!
