For the Quorn Korean BBQ Mince:
300g Frozen Quorn Mince
a drizzle olive oil
1 red onion, diced
3 tbsp. Korean BBQ sauce
2 limes, juice only
1 tbsp. tomato puree
1 tbsp. honey
For the slaw:
1/8 white cabbage, shredded
1/8 red cabbage, shredded
1 carrot, sliced into fine matchsticks
1 lime, juice only
A handful coriander leaves, chopped
To serve:
8 soft taco wraps
1 head little gem lettuce, shredded
4 lime wedges
Sriracha sauce (optional)
For the Quorn Korean BBQ Mince:
Heat a non-stick frying pan over a medium heat. Add the oil to the pan.
Add the Quorn Mince and onion to the pan and cook for 5 minutes stirring regularly.
Mix the BBQ sauce, lime juice, tomato puree and honey in a small bowl. Add 50ml of water and mix well. Add to the pan and cook for a further 5 minutes stirring regularly.
Set aside and keep warm.
For the slaw:
To serve:
Heat a griddle over a medium-high heat. Cook the tacos on the griddle for one minute on each side to warm.
Divide the shredded lettuce between the tacos, top with Quorn Korean BBQ Mince. Add a dollop of slaw and serve with limes and a drizzle of sriracha if desired.
