100g butternut squash, peeled and chopped into cubes
1 red pepper, chopped into cubes
1 courgette, chopped into disks
2 tbsp oil
1 tbsp dried mixed herbs
1 tbsp smoked paprika
1 tsp cayenne pepper
½ tsp salt
½ tsp black pepper
Preheat your oven to 200 C / Fan 180 C / Gas 6. Place the red onion, butternut squash, red pepper and courgette into a roasting tray. Drizzle with 1 tbsp oil and scatter over the mixed herbs, smoked paprika, cayenne pepper, salt and black pepper. Toss until the vegetables are coated in the oil and spices. Place in the oven for 15 minutes.
Meanwhile, place a frying pan on a medium heat. Add the oil and brown off the sausages in the pan for 4-5 minutes, turning frequently.
Add the sausages to the tray of mixed vegetables and transfer back to the oven for 25 minutes, before serving.
