Quorn Vegetarian Mince Chilli Cheese Bake

This Quorn Mince Chilli Cheese Bake is a quick and easy Mexican twist on the classic Chilli Con Carne. This comforting recipe combines delicious Quorn Vegetarian Mince and black beans with an oozy layer of melted cheese and fresh avocado! It’s also high in protein and packs a punch from the chillies too!

Ingredients

  • 200g Quorn Vegetarian Mince
  • 5 sprays of low calorie oil
  • 1 red pepper, diced
  • 1 red onion, diced
  • 1 clove of garlic, minced
  • 2 green chillies, diced
  • ½ a tin of black beans
  • 1 tin of chopped tomatoes
  • 100g brown rice (uncooked weight)
  • 60g high protein cheese
  • 1 tsp mixed herbs
  • 1 tsp paprika
  • Salt & pepper
  • To serve:
  • 1 avocado and a handful of fresh coriander

Method

  1. Spray a large pan with spray oil, add in the onion, pepper and garlic and fry these off for around 5 minutes or until softened. Add your Quorn Mince, paprika, mixed herbs and salt & pepper to the pan and fry for a further 5 minutes.
  2. Next add in the brown rice and add 500ml of water to the pan. Cover with a lid and simmer for around 15-20 minutes until the rice is cooked through.
  3. Stir in the chopped tomatoes and the black beans. Add to an ovenproof baking dish and top with the high protein cheese. Grill for around 5 minutes on high until the cheese is melted.
  4. Top with the avocado and fresh coriander and enjoy!

Tip: You can change up this dish depending on whether you like spice! If you can handle the heat you can add in extra fresh chillies when frying off the vegetables or sprinkle with dried chilli flakes when cooked.
