Vegan Crunchy Fillet Burger with Homemade BBQ Sauce

This vegan spin on the classic BBQ chicken burger uses Quorn Crunchy Fillet Burgers coated in a sweet and sticky homemade BBQ sauce and stacked with lettuce and tomato for that delicious fakeaway moment any day of the week. Serve with a side of homemade chips for the ultimate meal for 2!

Ingredients

  • For the burgers:
  • 1 pack Quorn Crunchy Fillet Burgers
  • 2 vegan burger buns
  • 2 tbsp of vegan mayonnaise
  • ½ head of iceberg lettuce
  • 1 large tomato, sliced
  • For the homemade BBQ sauce:
  • ¾ cup ketchup
  • 2 tbsp water
  • 1 tbsp soy sauce
  • 1 tsp English mustard
  • 2 tsp rice wine vinegar
  • ¼ cup dark brown sugar
  • 1 tsp smoked paprika
  • 1 tsp chilli powder
  • Salt & pepper

Method

  1. Pre-heat your oven and cook your Quorn Crunchy Fillet Burgers according to pack instructions.
  2. To make your sauce combine all ingredients in a pan and simmer for about 10 mins until thickened. Occasionally whisking until smooth.
  3. Toast the burger buns and add a tbsp vegan mayonnaise to each burger bun along with the lettuce and slices of tomato.
  4. When your Crunchy Fillet Burger is ready, assemble the burger by coating in the BBQ sauce and placing onto the burger bun.
  5. Enjoy!
