Vegetarian Teriyaki Strips Stir-fry

A totally tasty teriyaki-style stir-fry, packed with vibrant veg and succulent Quorn Vegetarian Strips. Served with rice, it’s a quick, easy and budget friendly weeknight meal that’ll be on the table in just over 20 minutes - so it’s perfect for those busy evenings at home!

Ingredients

  • 1 x 300g pack Quorn Strips

  • 2 tbsp. teriyaki sauce

  • 1 tbsp. honey

  • 1 tsp. tamarind sauce

  • 2 limes, juice only

  • 2 cloves garlic, crushed

  • 1 thumb ginger, grated

  • A drizzle olive oil

  • 1 small carrot, sliced into fine matchsticks

  • 1 red pepper, sliced

  • 100g tenderstem broccoli

  • 100g mange tout

  • 400g long grain rice

  • To garnish:

  • 1 spring onion, sliced

  • ½ tsp. sesame seeds

Method

  1. Place the teriyaki sauce, honey, tamarind sauce, lime juice, garlic and ginger in a bowl. Add 50ml of water and mix well.
  2. Heat a non-stick frying pan over a medium heat. Add the oil to the pan. Add the Quorn Strips and cook for 6 minutes stirring regularly.
  3. Add the prepared sauce, carrot, red pepper and broccoli, cook for 4 minutes stirring regularly.
  4. Add the mange tout and cook for a final 2 minutes. Set aside and keep warm.
  5. Cook the rice as per pack instructions. Drain and divide between 4 warmed serving bowls.
  6. Top the bowls with the Quorn Teriyaki Stir-fry and garnish with spring onion and sesame seeds.
