Yorkshire Pudding Wraps with Quorn Roast Beef Style Slices

This quick and easy veggie lunchbox idea brings the delicious flavours of a roast dinner to your picnic or kid’s lunchbox.

These Vegetarian Yorkshire Pudding Wraps are super easy to make and are filled with delicious Quorn Roast Beef Style Slices. We've used homemade Yorkshires in this recipe, but it also works well with shop bought too.

Simply layer up your Yorkshire pudding, roll up cut it into bite-sized slices. Serve with your gravy mayo dip for the perfect meat-free kids lunch idea for school, picnics or days out!

Ingredients

  • 30g Quorn Roast Beef Style Slices

For the Yorkshire Pudding Wraps:

  • 50g plain flour
  • 1 large egg
  • 100ml whole milk
  • 1 tbsp olive oil

For the gravy mayonnaise dip:

  • 20g gravy granules
  • 30g light mayonnaise

Method

  1. Preheat oven to 200°C. Meanwhile, add a tbsp of olive oil to a 20cm cake tin and heat in the oven for at least 5 mins while you make your mixture.
  2. Combine egg and milk in a jug, add to the flour and whisk until smooth.
  3. Pour the batter into the hot cake tin and return to the oven for 20 minutes, ensuring you don’t open the oven whilst it’s cooking
  4. Meanwhile, make your gravy mayo dip by mixing the gravy granules with a small amount of boiling water so they dissolve. Let this cool, and then mix with the mayonnaise until combined.
  5. After 20 mins, the Yorkshire pudding should be a golden brown colour. Remove from the oven and leave to cool in the tin. Once cool, remove from the tin and use a rolling pin to flatten it enough to roll.
  6. Add the Quorn Roast Beef Style Slices on top of the Yorkshire pudding and roll up. Cut into pinwheels.
  7. Pack the Yorkshire pudding wraps, gravy mayo dip and favourite fruits and veggies into a lunchbox and enjoy!
