Easy Air Fryer Quorn Roast with Sweet Potato

This roast with sweet potato and mixed vegetables is a quick and easy take on the classic Sunday Roast, the perfect for roast dinner for students or couples. It uses an air fryer to cut down on cooking time and save on putting the oven on.

You can also swap out the sweet potato for roasties or mash. Top tip: you can use the Quorn Roast leftovers in a sandwich the next day or freeze these for up to 1 month after cooking.

A Little Effort

Ingredients

  • ½ a Quorn Roast
  • 2 sweet potatoes
  • ½ cabbage
  • ½ head of broccoli
  • 1 red onion
  • 2 medium carrots
  • 100g green beans
  • 3 tsp of gravy granules

Method

  1. Pierce the film around the Quorn Roast, but do not remove, leaving metal end clips in place. Put into the air fryer at 180°C for around 40 mins until piping hot throughout.
  2. After 30 minutes, add in the broccoli, carrots and red onion.
  3. At the same time add the cabbage and green beans into a pan of boiling water.
  4. Wash and pierce your sweet potato and microwave for 6-10 mins (or until it is soft) carefully slice open and add to your plate.
  5. Make the gravy using the gravy granules and remaining boiling water from the vegetables, mix until smooth.
  6. Serve up and enjoy!

Tip: The cooking time may need to increase based on the size of your air fryer, so increase as needed.
