Leftover Mac and Cheese with Quorn Roast and Veggie Pigs in Blankets

This indulgent, festive Mac and Cheese is the upgrade you didn’t know your festive leftovers needed. It’s topped with a crispy Quorn Roast crumb and pigs in blankets, you could even add the leftovers from your cheeseboard into the sauce too!

A Little Effort

Ingredients

  • Quorn Roast of choice (Vegetarian, Ham or Beef)
  • Quorn Pigs in Blankets (made from Quorn Cocktail Sausages and Vegetarian Bacon)
  • 2 tbsp butter
  • 2 tbsp plain flour
  • 600ml milk
  • 250g grated cheese (we recommend cheddar, red Leicester and mozzarella)
  • 400g cooked pasta
  • 80g breadcrumbs
  • 1 tbsp oil
  • 1 tbsp mixed herbs
  • Extra cheese to top (optional)

Method

  1. Melt the butter in the pan and add in the flour and mix to make a roux.
  2. Slowly add in the milk, whisking to ensure there are no lumps in the sauce. Once smooth, add in your grated cheese.
  3. Add in your cooked pasta to the cheese sauce and combine.
  4. To create the leftover breadcrumb topping, take your leftover Quorn Roast of choice and chop into small pieces mixing with the breadcrumbs, oil, mixed herbs and extra cheese.
  5. Assemble your mac and cheese by adding the pasta into a baking dish and topping with the leftover breadcrumb mix. Top with leftover veggie pigs in blankets (or make these by wrapping Quorn Cocktail Sausages in strips of Quorn Vegetarian Bacon).
  6. Cook for 15 mins in the oven (on 180 degrees) or until the topping is crispy.
  7. Enjoy!
