  • 200g Quorn Meat Free Chicken Pieces 
  • 1 pack Quorn Meat Free Pepperoni Slices
  • 2 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 1 red pepper, deseeded and sliced
  • 1 yellow pepper, deseeded and sliced
  • 200g fine green beans, cut into bite size pieces
  • 2 garlic cloves, crushed
  • 2 tsp smoked paprika
  • ½ tsp saffron
  • 1 tsp mild chilli powder
  • 250g long grain rice
  • 900mls vegetable stock (made with 2 stock cubes)
  • 400g fresh tomatoes, skinned and chopped
  • 200g peas
  • 3 tbsp parsley, roughly chopped
  • Olives and lemon wedges to garnish


  1. Pre-heat 1 tablespoon of the oil in a large frying pan and cook the onion, peppers and beans for 3 minutes, add the garlic and spices and cook for a further 2 minutes
  2. Stir in the rice and stock, cover and simmer for 20 minutes, stirring frequently
  3. Meanwhile heat the rest of the oil and fry the Quorn Meat Free Pieces for 2-3 minutes until golden, then set aside
  4. Reduce the heat, add the Quorn Meat Free Pieces, Quorn Meat Free Pepperoni, tomatoes and peas and continue cooking for a further 5 minutes. Turn off the heat and sprinkle with the chopped parsley. Garnish with the olives and lemon wedges
