Vegan Greek Mezze Platter

Nothing says summer like this Vegan Greek Mezze Platter! A Greek twist on the classic charcuterie board with Quorn Vegan Chicken Pieces coated in a herby spice mix and served up with vegan feta, falafels, pitta bread, hummus and homemade vegan tzatziki. This meat-free platter contains a yummy selection of Greek Mezze that your friends and family will love!

Ingredients

  • 150g Quorn Vegan Chicken Pieces, defrosted
  • 2 pitta breads
  • 100g hummus
  • 150g falafels
  • 100g mixed olives
  • ½ a cucumber, chopped
  • ½ red pepper, sliced
  • 50g vegan feta

For the vegan tzatziki:

  • 75g vegan plain yoghurt
  • ½ a cucumber, grated
  • 30g chopped mint
  • 1 tbsp lemon juice
  • Salt & pepper to taste

For the Quorn Pieces seasoning:

  • 1 tsp oregano
  • 1 tsp paprika
  • 1 tsp garlic granules
  • Salt & pepper to taste

Method

  1. Marinate the defrosted Quorn Vegan Chicken Pieces in the seasoning for 24 hours prior to cooking.
  2. Make your vegan Tzatziki by mixing the vegan yoghurt with the grated cucumber, chopped mint, lemon juice and salt & pepper.
  3. Carefully skewer your marinated Quorn Pieces onto wooden sticks before frying in a pan for 10 minutes until brown on all sides and cooked through.
  4. Load up your board with your skewers, pittas, falafels, cucumber, red pepper, olives, vegan feta, vegan tzatziki and hummus.
  5. Enjoy!
