Quorn Gluten Free Meat Free Chicken Pieces Pizza

  • 150g Quorn Meat Free Chicken Pieces
  • 2 tbsp olive oil
  • 1/2 tsp chilli flakes
  • 1 tsp dried oregano
  • ½ tsp black pepper
  • 1 clove of garlic, crushed
  • 1 red onion, finely sliced
  • 1/2 orange pepper, finely sliced
  • ½ yellow pepper, finely sliced
  • 1 tbsp black olives, halved
  • 50g cheddar, grated or1 ball mozzarella, torn
  • Torn basil leaves
  • Ingredients for the Pizza Base
  • 250g gluten free flour
  • 2 tsp xanthan gum
  • 11/2 tsp baking powder
  • 50g butter
  • 75g cheddar, grated
  • 2 tbsp chopped fresh chives, optional
  • 200ml semi skimmed milk
  • Ingredients for Tomato Sauce
  • 4 tbsp tomato puree
  • 60ml vegetable stock
  • 1 clove garlic, crushed
  • Bunch of fresh basil, chopped
  • Salt and pepper to taste


  1. Preheat the oven to 220C/400F/Gas Mark 7
  2. To make the pizza base, sieve the flour, xanthan gum and baking powder into a bowl. Rub in the butter and then stir in the cheese and chopped chives. Add the milk little by little to form a dough. Turn out onto a floured surface and knead for a minute to form a smooth dough. Cover with cling film and set to one side
  3. Combine the chilli flakes, oregano, salt, black pepper and garlic in a bowl and toss the Quorn Meat Free Chicken Pieces in the blend to coat evenly
  4. Preheat 1 tbsp of the olive oil in a frying pan over a medium heat and cook the Quorn Pieces for 4-5 minutes until golden brown. Remove from the heat and set to one side
  5. Heat the remaining oil in a large frying pan, add the onion and peppers
  6. To make the tomato sauce, combine all of the ingredients
  7. Roll out the dough to a thickness of 1cm and cut into 2 rounds. Brush with oil, spread the tomato sauce over the top of the pizza and top with the onions, peppers, Quorn Pieces and olives. Sprinkle with grated cheese or shredded mozzarella and basil leaves  and bake in the centre of the oven for 20 minutes until golden brown
