Easy Gyros Bowl with Homemade Tzatziki

This high protein, easy gyros bowl recipe tastes like it’s straight from the Mediterranean! It’s super vibrant and packed full of fresh flavours with griddled Quorn Fillet Pieces, a cool homemade tzatziki and plenty of fragrant spices.

Perfect for those late summer dinners or lunchtimes, this flavour packed gyros bowl makes a tasty meal prep too (that’s if you’re lucky enough to have any leftovers!).

Our Quorn Fillet Pieces are marinated in a mix of yogurt, zaatar, lemon juice and garlic, before being griddled to perfection!

Build up your Gyros bowl, add the charred Fillet Pieces and serve with griddled flatbreads, then dig right in!

Ingredients

For the Quorn Fillet Pieces marinade:

For the homemade tzatziki:

  • 75g high protein 0% fat yoghurt
  • 75g cucumber, coarsely grated
  • ½ tsp zaatar
  • ½ lemon, juice only

For the Gyros Bowls:

  • 150g mixed variety tomatoes, sliced
  • 20g Kalamata olives
  • ½ red onion, sliced
  • 20g feta
  • ¼ cucumber, chopped
  • 50g chickpeas

To Serve:

  • 5 sprays low calorie cooking spray
  • Flatbreads
  • 1 tsp zaatar
  • Lemon wedges
  • Coriander leaves
  • Mint leaves

Method

For the Quorn Fillet Pieces Marinade…

  1. Mix the yoghurt, zaatar, lemon juice and garlic in a bowl. Add the Quorn Fillet Pieces and toss to coat. Set to one side.

For the homemade tzatziki…

  1. Mix all of the ingredients in a small bowl. Spoon into two small dip bowls and reserve for serving.

For the gyros bowls…

  1. Using two serving bowls arrange the sliced tomatoes between the two bowls. Top with the olives, red onion slices and crumble over the feta.
  2. Add the remaining ingredients to the bowls keeping each ingredient in sections.

To serve…

  1. Pre-heat a non-stick griddle pan over a medium-high heat. Spray the griddle with five sprays low calorie cooking spray.
  2. Add the marinated Quorn Fillet Pieces to the griddle and cook for 3-4 minutes on each side. Remove and divide the pieces between the 2 serving bowls.
  3. Slice the flatbread into triangles. Add the flat bread triangles to the griddle and cook for one minute each side.
  4. Sprinkle each gyro bowl with extra zaatar and garnish with lemon wedges, coriander leaves and mint leaves.

Chefs tip

In a hurry? Why not use store bought tzatziki. For extra flavour marinate the Quorn Fillet Pieces overnight in the fridge.
