Ingredients

  • 150g Quorn Vegetarian Chicken Pieces
  • 2 small white onions, sliced
  • 4 cloves of garlic
  • 2 large pieces of ginger
  • 1 tin of peeled plum tomatoes
  • 1 tin of coconut milk
  • 2 tbsp Rajah Chana Masala spice blend
  • 1 tbsp mango chutney
  • 1 tbsp olive oil/vegetable oil

Method

Chefs tip

  1. Finely dice your onions and mince/grate your garlic and ginger.
  2. Heat your oil in your pan and cook the onions until soft and translucent. Then, add the garlic and ginger and cook for another minute.
  3. Then add in your spice mix and the peeled plum tomatoes. Gently break these apart with the back of your wooden spoon. Next add in the Quorn Pieces, stirring well to make sure they’re fully coated.
  4. Pour in your coconut milk and bring the curry to a boil, then simmer for around 10 – 15 minutes until the sauce has thickened.
  5. Stir in your mango chutney and serve with chopped coriander to garnish and steamed rice.
  6. Enjoy!
