Ingredients
- 150g Quorn Pieces
- 150g cooked brown rice
- 1 clove garlic
- 1 red chilli
- Thumb sized piece of ginger
- 2 spring onions, sliced
- Low calorie cooking spray
- 1 red pepper
- 50g sugar snap peas
- 50g edamame beans
- 50g broccoli
- 1 tbsp low sodium soy sauce
- 1 lime
- 2 eggs (optional)
Method
- Finely chop the red chilli and grate the ginger and garlic. Chop all the veg into small chunks. Save the dark green bits of the spring onion for garnish.
- Heat up a large frying pan or wok and spray with some low calorie cooking spray and fry the Quorn Pieces for 10 minutes.
- Add the ginger, chilli and garlic and fry for 1 minute until fragrant. Follow with the veg and fry for 2-3 minutes.
- Add your cooked rice and season with soy sauce and lime juice. Fry for 4 minutes, tossing every 30 seconds or so.
- Fry your eggs to your liking in some low calorie spray.
- Pack rice into a small bowl and turn upside down on a plate. Serve your egg on top (if using) with the rest of the sliced spring onions.
