Ingredients

For the Quorn satay Pieces:

  • 300g frozen Quorn Pieces
  • 2 tbsp. wholegrain peanut butter
  • 4 tbsp. 0% fat high protein yoghurt
  • 1 lime, juice only
  • ½ tbsp. honey
  • ½ tsp. chilli flakes
  • 1 tbsp. chopped coriander

For the protein noodles:

  • 100g tenderstem broccoli
  • A drizzle sesame oil
  • 1 red pepper, sliced
  • 150g frozen edamame beans
  • 300g egg noodles
  • 1 tbsp. sesame seeds

For the slaw:

  • ¼ red cabbage, shredded
  • 1 carrot, julienne
  • 1 lime, juice only
  • 1 tbsp. chopped coriander

To serve:

  • 6 lime wedges

Method

For the Quorn satay Pieces:

  1. Mix the peanut butter, yoghurt, lime juice, honey, chilli flakes and coriander in a bowl. Add the Quorn Pieces and mix to coat.
  2. Pre-heat the oven to 180°C (fan)/200°C electric/Gas Mark 6.
  3. Tip the coated Quorn Pieces onto a baking tray lined with non-stick baking paper in one even layer.
  4. Cook in a pre-heated oven for 15 minutes.

For the noodles:

  1. Cut the tenderstem broccoli into bite sized pieces.
  2. Heat a drizzle of sesame oil in a non-stick frying pan over a medium-high heat.
  3. Add the tenderstem broccoli, red pepper and edamame beans. Sauté for 3 minutes. Add the noodles and sauté for a further 2 minutes.

For the slaw:

  1. Mix all of the slaw ingredients in a bowl and set to one side.

Serving and meal prep:

  1. If meal prepping divide the satay Quorn Pieces and noodles into freezer safe meal prep containers. Freeze portions as required*.
  2. To re-heat, ensure food is piping hot and serve with the slaw and lime wedges.

*Portions can be microwaved or reheated in a non-stick pan until piping hot.
