A speedy Japanese noodle stir-fry dish that’s big on flavour! Quorn Pieces soak up the punchy homemade Yaki sauce, before being tossed with soba noodles and vibrant pak choi. Light, nourishing, tasty and ready in minutes - it’s the perfect midweek pick-me-up you never knew you needed.

Ingredients

  • 1 x 300g pack Quorn Pieces

  • 2 tbsp. tomato ketchup

  • 2 tbsp. low salt soy sauce

  • 1 tbsp. honey

  • 1 clove garlic, crushed

  • Pinch chilli flakes

  • A drizzle olive oil

  • 4 heads baby pak choi, halved

  • 200g soba noodles

  • To garnish:

  • ½ tsp sesame seeds

Method

  1. To make the sauce, place the ketchup, soy sauce, honey, garlic and chilli flakes in a small bowl. Add 50ml of water and mix well.
  2. Heat a non-stick frying pan over a medium heat. Add the oil to the pan. Add the Quorn Pieces and cook for 5 minutes stirring regularly.
  3. Add the prepared sauce and pak choi to the pan. Simmer for 5 minutes stirring regularly.
  4. Cook the noodles as per pack instructions. Drain and divide between 4 warmed serving bowls.
  5. Divide the Quorn Pieces Yakisoba between the 4 bowls.
  6. Garnish with sesame seeds.

Chefs tip

Why not swap the pak choi in the recipe for tenderstem broccoli and the noodles for rice to give this dish a tasty twist!
