Mexican Pizza with Quorn Pieces

Ingredients

  • 175g Quorn Pieces
  • 200g tin chopped tomatoes
  • 2 tbsp tomato pureé
  • 1 clove of garlic crushed
  • 1 level tsp crushed chilli flakes to taste
  • 2 heaped tbsp coriander finely chopped
  • 2 x 150g pizza bases
  • 1 small red onion thinly sliced
  • 1/2 green pepper thinly sliced
  • 50g sweetcorn
  • 100g monteray jack cheese or cheddar, grated

Method

  1. Pre-heat the oven to 200°C (400°F) Gas Mark 6
  2. Mix together the chopped tomatoes, tomato pureé, garlic, crushed chilli flakes and chopped coriander
  3. Place the 2 pizza bases on a baking tray and spread the tomato mixture evenly over them
  4. Scatter the Quorn Pieces, red onion slices, green pepper and sweetcorn evenly over both the pizzas and top with the grated cheese. Cook for 15-20 minutes until golden brown
