This is a super quick and easy midweek meal. It's on regular rotation in our house. We use harissa as our chilli paste as it's easily available in our local supermarkets. Absolutely delicious!

Absolutely delicious I put sweet potato n steamed cabbage as a side dish my husband n I ate enough to fill us and apart from water we were still full at breakfast There was enough left to fill 2 tortillas each with cabbage n sweet potatoes using salad as the side dish so very economical 2 main meals for adults.I will try more of these recipes as I feel they are very much my taste and not full of salt sugar and fats, very healthy thank you I did seem to be getting very bored with the vegan meals I was making

Love this recipe, I swap chilli paste for chilli powder and I also include red pepper to give it some extra flavour. Could also throw in a square of dark chocolate for some added richness, if you prefer.

Add a teaspoon of cumin and cider vinegar. Exchange the veg stock for a tin of plum tomatoes. Stir in a dollop of natural yoghurt before serving. Amazeballs.
