Only had about 1 tbsp of smoked paprika, so used it with 1 tbsp of normal paprika. It worked quite well. We are a family of 5 so I ended up using Quorn Pieces, they worked really well also.

Love this one pot dinner. Easy to add more vegetables or beans to bulk out this meal, and stores well in the fridge for the next day. I love that I can pretty much throw it all together and walk away until cooked, perfect for a busy evening.

I was excited about this recipe, followed, measured and still after an hour my rice had not cooked. Had to add extra, extra stock which took out the flavours I had hoped for. Really disappointed and unsure where I have gone wrong.

Hi Andrea, basmati rice typically takes 15 to 20 minutes to boil but do let us know if you make it again - we'd love to hear if you do :)
