Quorn Meat Free Sausage One Pot with Sundried Tomatoes & Rocket Farro

  • 1 tbsp olive oil
  • 1 small leek, finely sliced
  • 2 cloves garlic, minced
  • 2 Quorn Meat Free Garlic and Parsley Sausages, sliced 
  • 150g quick cook farro
  • 60g sundried tomatoes chopped
  • 560ml vegetable stock
  • 1 large handful of rocket leaves


  1. Heat the oil in a pan and fry the leeks for 5 mins until softened
  2. Add in the garlic and Quorn Meat Free Garlic and Parsley Sausage slices and fry for another 2 minutes
  3. Then add in the farro and sundried tomatoes and fry for 30 seconds
  4. Stir in the stock and bring to the boil
  5. Reduce the heat to low, leave uncovered and simmer for 30-35 minutes until the farro is soft
  6. Switch off the heat and mix in the rocket before serving
