Quorn Meat Free Chicken Strips and Rice Stir Fry

Give this tantalisingly aromatic stir fry a try – perfect for a quick and easy midweek meal that the whole family will love. And to top it all off, it’s low in saturated fat too!

Ingredients

  • 1 pack Quorn Meat Free Fajita Strips or Quorn Meat Free Chicken Pieces
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 1 red pepper, de-seeded and cut into strips
  • 1 red chilli, de-seeded and very finely chopped
  • 2 cloves garlic, crushed
  • 75g canned black eyed beans, drained
  • 75g sweetcorn
  • 100g long grain white rice
  • 2 tomatoes, chopped into dice
  • 4 tbsp coconut cream
  • 3 tbsp coriander, finely chopped
  • salt and freshly ground black pepper
  • a few drops of tabasco sauce optional

Method

  1. Cook the rice according to back of pack instructions, set to one side.
  2. Heat the vegetable oil and cook the onion for 5 minutes or until softened, stir in the red pepper, chilli and garlic and cook for 3 minutes.
  3. Stir in the Quorn fajita strips and continue cooking for 5 minutes before adding the beans and the sweetcorn.
  4. Finally stir in the rice, tomatoes, coconut cream and coriander.
  5. Season to taste and add a few drops of tabasco sauce for an extra kick, if required.
  6. Simmer gently for 3-4 minutes and serve immediately.
