Marry Me Ramen with Quorn Fillet Pieces

You’ve tried the viral Marry Me Chicken, but how about Marry Me Ramen? This take on the viral recipe made with Quorn Chicken Fillet Pieces is the perfect midweek meal or weekend fakeaway.

Simply coat the Quorn Fillet Pieces in cornflour and spices before frying until crisp and golden. Whip up a tasty broth made with garlic, sundried tomatoes and spices before adding stock and cream. Toss in the ramen noodles and cook until soft and coated in the delicious sauce.

Spoon into warm bowls and top with the crispy Quorn Fillet Pieces and scatter with spring onion and chilli oil for a spicy kick!

Ingredients

For the Fillet Pieces coating:

  • 1-2 tbsp of cornflour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp chilli powder
  • 1 tsp olive oil

For the ramen broth:

  • 3 garlic cloves, diced
  • 50g chopped sundried tomatoes
  • 750ml-1L veg stock liquid
  • 300ml single cream
  • 200g ramen noodles
  • 50g grated parmesan
  • 1 tsp chilli flakes
  • 1 tsp oregano
  • 15g fresh coriander

To garnish:

  • 3 spring onions, finely chopped
  • 1 tbsp chilli oil
  • Sesame seeds (optional)

Method

  1. Coat Quorn Fillet Pieces in 1-2 tbsp cornflour and spices (1 tsp of paprika, garlic powder and chilli powder) and toss until each piece is lightly and evenly coated.
  2. Heat a shallow amount of olive oil in a pan until sizzling and then add in your coated Fillet Pieces, frying for a few mins each side until crispy and golden. Transfer to a plate to pop on top later.
  3. Fry off the garlic and sundried tomatoes, along with 1 tsp each of oregano, paprika and chilli flakes for a few mins until fragrant.
  4. Pour in veg stock liquid (start with 300-400ml) and 300ml of single cream. Stir through, and then flavour the broth with a sprinkle of grated parmesan & a small handful of chopped coriander. Add in your ramen noodles and cook in the broth for a few mins or according to pack instructions. Keep stirring.
  5. Add in extra vegetable stock, if necessary, then serve in to bowls and add your Quorn Fillet Pieces on top. Garnish with extra coriander, spring onion, sesame seeds (optional), chilli flakes (optional), an extra sprinkle of parmesan (optional) and a drizzle of chilli oil.
