Ingredients

For the Quorn Mince chilli:

  • 300g frozen Quorn Mince
  • A drizzle olive oil
  • 1 red onion, diced
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • ½ tbsp. mild chilli powder
  • 100g tomato puree
  • 1 tin chopped tomatoes
  • 400ml very low vegetable stock
  • 1 tin kidney beans, drained
  • A handful coriander, chopped
  • 500g cooked brown rice

For the cool yoghurt dip:

  • 120g 0% fat high protein yoghurt

Method

For the Quorn Mince chilli:

  1. Heat a drizzle of olive oil over a medium heat. Add the onion and peppers, sauté for 5 minutes.
  2. Add the Quorn Mince, chilli powder and tomato puree. Cook for 1 minutes.
  3. Add the chopped tomatoes and stock. Bring to a simmer and cook for 8 minutes.
  4. Add the kidney beans and simmer for a further 2 minutes.
  5. Remove from the heat and stir through the chopped coriander.

Serving and meal prep:

  1. If meal prepping divide the Quorn bolognaise, spelt fusilli and mini garlic breads into freezer safe meal prep containers. Freeze portions as required*.
  2. To re-heat, ensure food is piping hot and serve with cool yoghurt dip and brown rice.

* Portions can be microwaved or reheated in a non-stick pan until piping hot. Do not re-heat the rice portions twice.
