Ingredients
For the Quorn Mince chilli:
- 300g frozen Quorn Mince
- A drizzle olive oil
- 1 red onion, diced
- 1 red pepper, sliced
- 1 green pepper, sliced
- ½ tbsp. mild chilli powder
- 100g tomato puree
- 1 tin chopped tomatoes
- 400ml very low vegetable stock
- 1 tin kidney beans, drained
- A handful coriander, chopped
- 500g cooked brown rice
For the cool yoghurt dip:
- 120g 0% fat high protein yoghurt
Method
For the Quorn Mince chilli:
- Heat a drizzle of olive oil over a medium heat. Add the onion and peppers, sauté for 5 minutes.
- Add the Quorn Mince, chilli powder and tomato puree. Cook for 1 minutes.
- Add the chopped tomatoes and stock. Bring to a simmer and cook for 8 minutes.
- Add the kidney beans and simmer for a further 2 minutes.
- Remove from the heat and stir through the chopped coriander.
Serving and meal prep:
- If meal prepping divide the Quorn bolognaise, spelt fusilli and mini garlic breads into freezer safe meal prep containers. Freeze portions as required*.
- To re-heat, ensure food is piping hot and serve with cool yoghurt dip and brown rice.
* Portions can be microwaved or reheated in a non-stick pan until piping hot. Do not re-heat the rice portions twice.
