Ingredients

  • 300g Quorn Mince

  • 1 tsp vegetable oil

  • 5 garlic cloves, minced

  • 1 shallot, finely diced

  • 1 tsp fresh ginger, minced

  • 1 chilli, finely diced

  • A large handful of Thai basil

  • A handful of spring onions, sliced (optional)

  • 1 tsp chilli oil (optional)

  • Sesame seeds (optional)

  • For the sauce:

  • 2 tbsp vegetarian oyster sauce

  • 2 tbsp light soy sauce

  • 2 tbsp dark soy sauce

  • 2 tsp brown sugar

  • ½ tsp white pepper

  • To serve:

  • Cooked jasmine rice

  • 4 fried eggs (optional)

Method

  1. Whisk together the sauce ingredients in a small bowl.
  2. Heat the oil in a large frying pan and sauté the garlic, ginger, shallots & chilli in a pan for a few minutes until fragrant.
  3. Add the Quorn Mince & pour over the sauce, mix well and cook for 10 minutes. Stir through a handful of shredded Thai basil towards the end.
  4. Serve with cooked jasmine rice, a fried egg and top with the sliced spring onions, chilli oil and sesame seeds (optional).
