
Vegetarian Pad Kra Pao with Quorn Mince

A veggie twist on a Thai classic - this Thai basil stir-fry, aka Pad Kra Pao, made with Quorn Mince is ready in just 15 minutes. It’s spicy, savoury and so addictive, making it THE most delish, quick and easy weeknight winner or weekend fakeaway!

Ingredients

300g Quorn Mince
-
1 tsp vegetable oil
-
5 garlic cloves, minced
-
1 shallot, finely diced
-
1 tsp fresh ginger, minced

1 chilli, finely diced

A large handful of Thai basil
-
A handful of spring onions, sliced (optional)
-
1 tsp chilli oil (optional)
-
Sesame seeds (optional)

For the sauce:
-
2 tbsp vegetarian oyster sauce
-
2 tbsp light soy sauce
-
2 tbsp dark soy sauce
-
2 tsp brown sugar
-
½ tsp white pepper

To serve:
-
Cooked jasmine rice
-
4 fried eggs (optional)
Method
- Whisk together the sauce ingredients in a small bowl.
- Heat the oil in a large frying pan and sauté the garlic, ginger, shallots & chilli in a pan for a few minutes until fragrant.
- Add the Quorn Mince & pour over the sauce, mix well and cook for 10 minutes. Stir through a handful of shredded Thai basil towards the end.
- Serve with cooked jasmine rice, a fried egg and top with the sliced spring onions, chilli oil and sesame seeds (optional).
