Easy Courgette Spaghetti Bolognese

For a deliciously quick & easy meal, try this tasty recipe for a healthier Bolognese. Spiralized courgette goes perfectly with Bolognese sauce, so we’ve added in some courgette spaghetti along with traditional pasta spaghetti for a veg-packed twist on the traditional Bolognese!

We’ve used Quorn Mince to make the Bolognese sauce and with the added courgette spaghetti, you’ll be serving up an extra portion of veg in this Bolognese recipe.

With a delicious, tasty texture, this recipe is full of flavour and will be on the table in under 30 minutes, so it’s perfect for those busy weeknights!

Ingredients

  • For the Quorn Mince Bolognese:
  • 300g Quorn Mince
  • A drizzle of olive oil
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 1 carrot, grated
  • 100g tomato puree
  • 1x 400g tin chopped tomatoes
  • 100g button chestnut mushrooms, sliced
  • 100g cherry tomatoes
  • 500ml low salt vegetable stock
  • For the courgette spaghetti:

  • 300g dried spaghetti
  • 2 courgettes
  • To serve (optional):

  • Basil leaves
  • Vegetarian parmesan shavings

Method

For the Quorn Mince Bolognese:

  1. Heat a drizzle of oil in a non-stick saucepan. Add the onion, garlic and carrot. Sauté for 5 minutes stirring regularly.
  2. Add the Quorn Mince, tomato puree, tinned tomatoes, mushrooms, cherry tomatoes and stock. Mix well. Bring to a simmer, then continue to simmer for 10 minutes - stirring occasionally.

For the courgette spaghetti:

  1. Using a spiralizer spiralize the courgettes and set to one side (if you don’t have a spiralizer to hand, simply coarsely grate the courgettes).
  2. Cook the spaghetti as per pack instructions. In the final minute of cooking the spaghetti add the spiralized courgette and boil for the final minute to soften the courgette.
  3. Drain and divide between 4 warmed pasta bowls.

To serve:

  1. Top the courgetti spaghetti with the Quorn Mince Bolognese and garnish with basil leaves and vegetarian parmesan if preferred. Enjoy!

Chefs tip

The Quorn Mince Bolognese sauce freezes well, so if you are lucky enough to have leftovers, pop in a container in the freezer.

If you don’t have a spiralizer use a coarse grater for the courgette.
