Ingredients
- 150g Quorn Mince
- 3 cloves garlic
- 1 tbsp harissa paste
- 1 tbsp tomato purée
- 10 cherry tomatoes
- 1 courgette
- 1 tsp chilli flakes
- 1 tsp smoked paprika
- 100g extra thick Greek yoghurt
- 1 lemon (zest and juice)
- Salt to taste
- 120g dried pasta
- Fresh mint & dill to garnish
Method
- Cook the pasta according to packet instructions.
- Heat up 1 tbsp of oil in a pan and fry the courgettes with 2 cloves of crushed garlic for 2-3 minutes.
- Add the Quorn Mince and cook for a further 10 minutes.
- Add the chilli flakes and paprika and cook for 1 minute until lightly toasted.
- Add the harissa and tomato paste and 150ml water. It should become saucy. Season with a little salt and pepper if you wish.
- In a bowl, mix the yoghurt with the zest and juice of 1 lemon and 1 clove of grated or crushed garlic. Mix well.
- Mix half your Quorn mixture in with the pasta and split between 2 bowls.
- Add a couple of tablespoons of the yoghurt on top of the pasta followed by the rest of your Quorn mixture.
- Finish with herbs and halved cherry tomatoes.
