Ingredients

  • 150g Quorn Mince
  • 3 cloves garlic
  • 1 tbsp harissa paste
  • 1 tbsp tomato purée
  • 10 cherry tomatoes
  • 1 courgette
  • 1 tsp chilli flakes
  • 1 tsp smoked paprika
  • 100g extra thick Greek yoghurt
  • 1 lemon (zest and juice)
  • Salt to taste
  • 120g dried pasta
  • Fresh mint & dill to garnish

Method

  1. Cook the pasta according to packet instructions.
  2. Heat up 1 tbsp of oil in a pan and fry the courgettes with 2 cloves of crushed garlic for 2-3 minutes.
  3. Add the Quorn Mince and cook for a further 10 minutes.
  4. Add the chilli flakes and paprika and cook for 1 minute until lightly toasted.
  5. Add the harissa and tomato paste and 150ml water. It should become saucy. Season with a little salt and pepper if you wish.
  6. In a bowl, mix the yoghurt with the zest and juice of 1 lemon and 1 clove of grated or crushed garlic. Mix well.
  7. Mix half your Quorn mixture in with the pasta and split between 2 bowls.
  8. Add a couple of tablespoons of the yoghurt on top of the pasta followed by the rest of your Quorn mixture.
  9. Finish with herbs and halved cherry tomatoes.
