This veggie version of the viral hot honey cottage cheese bowl made with Quorn Mince is the perfect mix of savoury, sweet and spicy! This recipe is ready in just 20 minutes too making it a great quick and easy meal idea.

Ingredients

  • 150g Quorn Mince

  • 1 large sweet potato

  • 1 avocado, sliced

  • 2 tbsp cottage cheese

  • A handful of fresh parsley, chopped

  • Olive oil

  • 1 tbsp taco seasoning

  • Salt & pepper

  • For the hot honey:

  • 3 tsp honey

  • 1/2 tsp chilli flakes

  • Juice of 1/2 a lemon

Method

  1. Dice the sweet potato into cubes and coat with olive oil, paprika, salt and pepper. Air-fry for 20 minutes at 180°C until crispy.
  2. Meanwhile, to a pan on medium heat, add a drizzle of olive oil and the Quorn Mince. Season with salt and pepper, then add the Taco seasoning and cook for 10 minutes.
  3. Create your hot honey drizzle by mixing together the honey, chilli flakes and lemon juice.
  4. Add the sweet potato, seasoned Quorn Mince, avocado and cottage cheese to a bowl. Garnish with chopped parsley and hot honey.
  5. Enjoy!
