Ingredients

150g Quorn Mince

1 large sweet potato

1 avocado, sliced

2 tbsp cottage cheese

A handful of fresh parsley, chopped

Olive oil

1 tbsp taco seasoning

Salt & pepper

For the hot honey:
-
3 tsp honey
-
1/2 tsp chilli flakes
-
Juice of 1/2 a lemon
Method
- Dice the sweet potato into cubes and coat with olive oil, paprika, salt and pepper. Air-fry for 20 minutes at 180°C until crispy.
- Meanwhile, to a pan on medium heat, add a drizzle of olive oil and the Quorn Mince. Season with salt and pepper, then add the Taco seasoning and cook for 10 minutes.
- Create your hot honey drizzle by mixing together the honey, chilli flakes and lemon juice.
- Add the sweet potato, seasoned Quorn Mince, avocado and cottage cheese to a bowl. Garnish with chopped parsley and hot honey.
