Ingredients
For the Quorn Mince keema dal:
- 300g frozen Quorn Mince
- A drizzle olive oil
- 2 tbsp. curry spice paste
- 100g dried red lentils
- 1 red pepper, diced
- 6 spring onion, sliced
- 1 tin chopped tomatoes
- 500ml very low salt vegetable stock
- 120g spinach
- 150g 0% fat high protein yoghurt
For the cauliflower rice:
- 250g cauliflower, cut into florets
- A handful coriander leaves
- 250g cooked quinoa
For the cool yoghurt drizzle:
- 150g 0% fat high protein yoghurt
- A handful coriander leaves
To serve:
- Mango chutney
Method
For the Quorn Mince keema dal:
- Heat a drizzle of olive oil over a medium heat. Add the spice paste and cook for one minute.
- Add the Quorn Mince, lentils, red pepper, spring onions, chopped tomatoes and stock. Bring to a simmer and cook for 15 minutes.
- Remove from the heat and stir in the spinach and yoghurt.
For the coriander and quiona:
- Place the cauliflower florets into a food processor and blitz to breadcrumb consistency. Add the coriander and pulse to combine. Add the quinoa and mix well.
For the cool yoghurt drizzle:
- Mix the yoghurt and coriander leaves in a small bowl and set to one side.
Serving and meal prep:
- If meal prepping divide the Quorn Mince keema dal and rice into freezer safe meal prep containers. Freeze portions as required*.
- To re-heat, ensure food is piping hot and serve with mango chutney and cool yoghurt drizzle.
* Portions can be microwaved or reheated in a non-stick pan until piping hot.
