Ingredients

For the moussaka:

  • 300g Quorn Mince
  • A drizzle olive oil
  • 1 red onion, sliced
  • 2 cloves garlic, sliced
  • 1 aubergine, diced
  • 1 tbsp. zaatar
  • 1 tsp. cinnamon
  • 2 tbsp. tomato puree
  • 1 tin chopped tomatoes
  • ½ tin green lentils, drained
  • 300ml very low salt vegetable stock
  • 75g spinach
  • 1 tbsp. Fresh oregano leaves

For the zaatar sauce:

  • 120g high protein 0% fat yoghurt
  • 1 tbsp. zaatar
  • 1 tsp. lemon juice

For the Greek salad:

  • 100g cherry tomatoes
  • 1 red onion, thinly sliced
  • ¼ cucumber, diced
  • 75g black olives, halved
  • 50g feta, crumbled
  • 1 tbsp. pine nuts

To serve:

  • 1 flatbread

Method

For the moussaka:

  1. Heat a drizzle of olive oil in a sauté pan.
  2. Add the onion, garlic and aubergine to the pan and sauté for 5 minutes.
  3. Add the Quorn mince, zaatar, cinnamon and tomato puree, cook for 1 minute.
  4. Add the chopped tomatoes, lentils and stock. Simmer for 10 minutes.
  5. Remove from the heat and add the fresh spinach and oregano leaves.

For the zaatar sauce:

  1. Mix all of the ingredients for the zaatar sauce in a small bowl. Set to one side.

For the Greek salad:

  1. Mix all of the ingredients in a bowl and gently toss to combine.

To serve:

  1. Slice the flatbread into 6 wedges.

Serving and meal prep:

  1. If meal prepping divide the Quorn Moussaka into 6 freezer safe meal prep containers. Freeze portions as required*.
  2. To re-heat, ensure food is piping hot and serve with a fresh portion of zaatar yoghurt, Greek style salad and a wedge of flatbread.

* Portions can be microwaved or reheated in a non-stick pan until piping hot. Do not re-heat the rice portions twice.
