Ingredients

  • 300g Quorn Vegetarian Meat-Free Mince
  • 1 medium red/white onion, chopped
  • 1 medium carrot, diced
  • 3 garlic cloves, chopped finely or crushed
  • 2 tablespoons tomato paste
  • 1 tin of chopped tomatoes
  • 1 vegetable stock cube/meat-free beef stock cube, dissolved in 500ml of water
  • 300g lasagne sheets, broken into pieces
  • 150g grated mozzarella cheese
  • 2 large handfuls of spinach
  • 1 tsp garlic granules
  • ½ tsp chilli flakes
  • Salt & pepper

Method

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion, carrot and garlic. Sauté until soft.
  2. Add your Quorn Vegetarian Mince to the pot and cook until it's browned.
  3. Stir in the tomato paste and seasoning and cook for a couple of minutes.
  4. Add the whole tin of chopped tomatoes. Add a little water to the empty can, shake and add this to the mixture to rinse your tin. Add the vegetable or meat-free beef stock mixture to the pot.
  5. Break the lasagne sheets into small pieces and add these in. Bring the mixture to a simmer and cook for 10-20 minutes, or until the lasagne sheets are cooked. Stir occasionally so the sheets don’t stick together.
  6. Before taking it off the heat, stir in your grated mozzarella and spinach and cook until it is all combined.
  7. Taste and adjust the seasoning as needed. Serve and enjoy!

Chefs tip

For a more soup-like consistency dissolve the stock in 750ml of water.

Really tasty especially with garlic bread (I didn’t have any garlic granules, only the 3 garlic cloves so this was a nice naughty extra!)
