Ingredients
For the Quorn Persian Mince:
- 300g Quorn Mince
- A drizzle olive oil
- 2 red onions, diced
- 2 tbsp. harissa paste
- 1 tsp. sumac
- 2 tbsp. tomato puree
- 250ml very low salt vegetable stock
- 1 tin kidney beans, drained
- 100g pomegranate seeds
- A handful mint leaves, chopped
For the couscous:
- 250g giant or regular couscous
- 100g pomegranate seeds
- 2 tbsp. chopped mint
For the mint yoghurt dip:
- 120g high protein 0% fat yoghurt
- 1 tbsp. chopped mint
To serve and meal prep:
- 100g baby spinach
Method
For the Quorn Persian Mince:
- Heat a drizzle of olive oil in a sauté pan.
- Add the onion to the pan and sauté for 5 minutes.
- Add the Quorn Mince, harissa paste, sumac and tomato puree, cook for 1 minute.
- Add the stock and kidney beans.
- Simmer for 9 minutes.
- Add the pomegranate seeds and cook for a further minute.
- Remove from the heat and add the chopped mint.
For the couscous:
- Cook the couscous as per pack instructions.
- Drain and rinse with cold water. Place into a large bowl.
- Add the pomegranate seeds and mint. Mix to combine.
For the mint yoghurt dip:
- Mix the yoghurt and mint in a bowl. Set to one side.
Serving and meal prep:
- If meal prepping divide the Persian Mince, couscous and spinach into freezer safe meal prep containers. Freeze portions as required*.
- To re-heat, ensure food is piping hot and serve with mint yoghurt dip.
*Portions can be microwaved or reheated in a non-stick pan until piping hot.
