Quorn Spinach and Red Pepper Slices are the perfect addition to any veggie sandwich. This recipe makes a deliciously vibrant sandwich with crushed avocado and red and golden beetroot. This one might become your new lunchtime favourite!

- 3 Quorn Spinach and Red Pepper Slices
- 1 slice of sourdough bread
- ½ avocado
- Chioggia Beetroot
- Golden Beetroot
- 2 radishes
- Toast the bread. Crush the avocado and mix with salt and pepper. Slice the beetroots and radishes thinly.
- Add the Spinach and Pepper slices to the bread. Layer with avocado, beetroots, radishes and cress. Add salt and pepper to taste.
